The main three are meat (obviously), eggs, and milk. Eggs and milk are ingredients of practically any meal you can think of. Replacing these animal products is key to having more than just salad every meal. Being a master chef isn't necessary to replace those ingredients. Luckily many companies have specific food replacement products that are out in most grocery stores.

The Magic of Tofu

Nothing comes close to meat-replacement than tofu. If it is seasoned and cooked just right, you may not even notice the difference. Due to our love for animals, some vegans stray from eating meals with meat ingredients even if it can be replaced. Tofu, however, is definitely another answer to, "What do vegans eat?" There are recipes, even cookbooks out there about nothing but tofu. I've had delicious tofu flan since flan contains eggs and milk originally and I went bonkers over it before I became vegan. It may look weird, but it can be magically delicious.

Important Vegan Essentials

If you are still interested in becoming a vegan then you must consider adding a few certain nutrients in your diet everyday. Another answer to, "What do vegans eat?" are protein, vitamin B12, Omega3, Iodine, and Iron. There aren't many fruits and vegetables that give enough protein so keep those nuts and beans handy. Vitamin B12 comes from bacteria but can be found in fortified foods. Use flax seed oil for Omega3. If you like sushi then you'll get plenty of Iodine from the seaweed.
